Snakebite Spaghetti

Ingredients
 1 lb Mild italian sausage
 8 oz Button mushrooms, halved
 1 Medium vidalia onion, diced
 1 Fresh roma tomato, diced
 Half can of black, pitted olives, halved
 2 tbsp Olive oil
 ½ cup Red wine
 1 tbsp Minced garlic
 1 tbsp Diced jalapenos
 Dried oregano
 Dried basil
 1 dash Cayenne
 Salt and pepper to taste
 24 oz Homemade meat sauce
 Fresh basil
 Peorino romano
 Angel hair pasta
Cooking Directions

Boil the water for your pasta

heat the olive oil in a deep skillet on medium-high

Saute the italian sausage

Before the sausage is browned; add salt, pepper, oregano, dried basil, and cayenne pepper and saute till browned

Remove the meat from the skillet and set aside

Saute the onions and mushrooms in the drippings and fond of the meat

7

add salt and pepper to onions and mushrooms and saute till onions are translucent

8

Add wine and reduce

9

Add the meat back into the mixture

Add the garlic, olives, and jalapenos

Boil your pasta while your mixture comes together

Strain the noodles, keeping a small amount of pasta water in the pot

Place the meat mixture in the pasta water and return to heat

14

add the pasta sauce to the mixture

when the sauce starts to bubble, turn off the heat and add the pasta

16

Let the dish rest to marry the flavors

Serve in a bowl and finish with fresh basil and pecorino romano.
