Taco Skillet Lasagna

Ingredients
 6 oz Creamette® Mafalda
 1 lb lean ground beef
 1 (1.25 oz.) dry taco seasoning mix
 1.50 cups hot water
 0.50 cup small curd cottage cheese
 0.25 cup grated Parmesan cheese
 2 oz shredded mozzarella cheese
 1 tomato, cored and chopped (optional)
Cooking Directions

 Prepare pasta according to package directions; drain.

 In a large skillet, over medium heat, brown beef; stir in taco seasoning mix, then water. Bring to a boil; reduce heat and simmer covered for 15 minutes, stirring occasionally.

 Stir in cottage and Parmesan cheese then pasta; heat through.

 Top with mozzarella cheese. Garnish with tomato, parsley and olives if desired.
