Spinach Stuffed Manicotti

Ingredients
 8 oz Creamette® Manicotti
 1 lb lean ground beef
 0.50 cup onion, chopped
 2 garlic clove, chopped
 1 (24 oz.) pasta sauce
 3 cups shredded mozzarella cheese, divided
 1 (15 oz.) ricotta cheese
 1 (10 oz.) frozen chopped spinach, thawed, well drained
 2 egg
 0.33 cup grated Parmesan cheese

  Prepare pasta according to package directions. Preheat oven to 350º F.

 In large skillet, over medium heat, brown meat; pour off fat .Add onion and garlic; cook and stir in until tender. Stir in pasta sauce.

 In medium bowl, combine 2 cups mozzarella cheese, ricotta cheese, spinach, eggs, and Parmesan cheese; mix well. Fill pasta with cheese mixture. Arrange in grease 13x9-inch baking dish. Spoon sauce evenly over pasta. Cover; bake 30 minutes or until hot and bubbly. Top with remaining 1 cup mozzarella cheese. Bake 15 minutes longer. Let stand 10 minutes before serving.
