6 oz Creamette® Mafalda
1 lb lean ground beef
1 pkg (1.25 oz.) dry taco seasoning mix
1 1/2 cups hot water
1/2 cup small curd cottage cheese
1/4 cup grated Parmesan cheese
2 oz shredded mozzarella cheese
1 each tomato, cored and chopped (optional)
  chopped parsley (optional)
  sliced ripe olives (optional)

Cooking Directions:

1.  Prepare pasta according to package directions; drain.

2.  In a large skillet, over medium heat, brown beef; stir in taco seasoning mix, then water. Bring to a boil; reduce heat and simmer covered for 15 minutes, stirring occasionally.

3.  Stir in cottage and Parmesan cheese then pasta; heat through.

4.  Top with mozzarella cheese. Garnish with tomato, parsley and olives if desired.
